To make 1 cup of mayonnaise you will need:
- 1 cup of light olive oil
- 1 egg
- Juice of 1 lemon
- A pinch of salt (and pepper, if desired)
- Separate the eggs - you will use the yolk.
- Combine egg yolk and 1-2 tbsp of lemon juice in bowl or food processor (or stand mixer with whisk attachment)
- Whisk together egg yolk and lemon juice... once blended start mixing in the oil, SLOWLY.
- Mix until thick consistency.
- Add salt and pepper to your liking. If it's too thick you can add a little water (or more lemon juice).
